Stop refrigerating everything

Half the fruit people throw away was killed by the fridge. A short guide to what belongs in there and what does not.

Bananas should never go in the fridge. Cold turns the skin black within a day and stops the fruit ripening properly afterwards. Keep them on the counter, away from other fruit, and pull them apart from the bunch if you want them to last an extra day or two.

Melons, mangoes and papaya want to finish ripening at room temperature. Once they are ripe, then refrigerate them, and then only for a few days. Putting an unripe mango in the fridge is the fastest way to get a mango that never becomes good.

Apples, grapes, pomegranate and all citrus are genuinely better cold. Apples in particular last weeks longer refrigerated. Just keep apples away from everything else — they release ethylene, which quietly ripens whatever is sitting next to them.

The general rule: if it grew somewhere hot, let it finish at room temperature. If it grew somewhere temperate, the fridge is fine.
